Hello guys, first time posting.
I just moved in my new house and I have a pretty big garden

I am planning on Christmas holidays to build a brick wood oven - rotisserie grill - smoker combo.
My father in law is a builder so no problems with that.
I am pretty confident on my plans for wood oven and rotisserie grill but I am not sure about the smoker since I never had (or used) one and we don't use them here in Cyprus.
My main question is should I plan for gas or wood? (I don't want to start a war btw)
I was thinking something like the "smoke vault" but build out of bricks?
Should I make it taller and put wood on the bottom?
Keep in mind that I am pretty good on control systems so I am even thinking of putting a PID controller to regulate the air-flow to control the temperature (if i use wood).
I really want to hear your opinions.
We have abundance of olive trees and carob trees here that have a really interesting smoke from what I hear.
