Now in English: Albert Adria's Tapas: The TICKETS Cuisine

I've been lusting after this book for a while, but it was only available in Catelan (Ferran and his brother Albert speak Catelan natively, not Spanish. Catalan is the official language of Barcelona). 2 nights ago I ate at TICKETS in Barcelona, and was thrilled to see that the book is now available in English. The book covers all of the big hits at TICKETS, and uses a play-by-play pictorial style similar to ChefSteps. It is designed to be approachable, chef wants the home cook to not be afraid to try techniques that require sous vide immersion circulators, vacuum chambers, or rare to find ingredients. The book works hard to demystify the cooking process, and make the reader less afraid of new techniques and equipment.

One of the staff members at TICKETS told me they will ship this book worldwide to anyone who places an order via reservations@ticketsbar.es. The book is so good that I suspect I will get more use out of it than I am getting out of el Bulli 2005-2011.

Hahaha...... the book is actually in Castellano. (At least my copy is.) Castellano and Catalan are both 'official' languages in Catalunya.

The book is outstanding, even though I have to plug most of it into Google Translate. There's a whole chapter on oysters. Not sure if I want to get the English version, there's something entertaining about having to 'discover' everything. Of course, the likelihood of successfully replicating a dish is somewhat imperiled......

Where did you stay? We had an apartment right across the street from Mercat de Sant Antoni, so we were walking distance from all the Adrià restaurants. (Couldn't bag a ressie at Tickets, but had a great meal at Pakta.) It was nuts; when we were there in April, there was a lot of heated talk about the separation referendum. There was a night of 'disturbios' where people threw things at buildings and stuff. But all in all it was a great time. Can't wait to go back.

This week we ate close to 30 courses at tickets, around 14 courses at Bodega 1900, and the entire Manu-Pichu tasting menu at Patka. We also tried to get into Adria's new Mexican restaurants that opened last month but we landed too late, kitchen closed at 10:30. I've been to all three multiple times, the staff at Tickets and Bodega remember me each time we show up and Tickets staff always finds us a seat even though they are booked solid months in advance... they are really good about taking care of their regulars, friends, or customers like me who they know are on a food pilgrimage. Great example of how to manage a restaurant, they always reserve tables for select customers who walk in - but you might have to wait 3-6 months for a standard reservation.

Glad to hear you tried Patka, I think Patka may be Albert Adria's greatest achievement in his post el Bulli career. Can you believe he is allergic to shellfish? The menu was almost 100% different from 1 year ago, the kitchen has evolved to favoring more of the Peruvian side, and less of the Japanese side of Niki cuisine. Alas Sebastian Mazolla is no longer running the show from behind the scenes, but the FOH chefs were always the featured stars anyway. While we were eating, there were 15 staff members attending to 18 guests - impeccable service, and insanely perfect timing from the kitchen!

So what dishes have you made so far? I am going to make the airbags with manchego espuma this weekend, and I have already made the infused watermelon but I cannot wait to make the Bodega 1900 style version with Vermouth and replace the watermelon with a Christmas Melon. Also excited to try to make the oysters & razor clams!

I have written to Tickets a couple of times with no response. Amazon tells me as of a week ago they do not have the english versions. Anybody going there and can pick up a copy for me and/or any other ideas?

Get on a plane and go eat there so you can experience the real deal - and pick up the book at the same time obviously! ;-) Its worth it, such an amazing city. Very affordable.
