Tight Lamb Shanks

Hello, I am interested to know if it is possible to actually prepare and serve lamb shanks that look like the ones in modernist cuisine? They sit perfectly upright, so perhaps they saw the bottom level? As well. the bones are completely white after they are fully cooked, and look beautiful. Is there anyway to achieve this? The easiest way to get the shank to stand upright is to use shims under it or sit it in a vegetable mash. The meat contracts during cooking, or is fork tender after cooking, so trying to get and keep the bottom flat is difficult so it could stand by itslef. I always have the shank bone at ~45° angle on a bed of mash/onions so it will survive transport from the pass to the table.

Trim the meat from the bone and ensure the bone is clean prior to cooking. Get in there with a paring knife and scrape it clean. The bone will come out nice and white once cooked.
