The 3 November New Yorker has a good article on gluten free. The best thing is you can read it free on their
site.

It's interesting that the scientist who first really described non-celiac gluten sensitivity as a thing now believes
maybe it isn't a thing
. He was astonished to learn of the explosion of NCGS cases in this country and began looking into it. Turns out, about 85% of those reporting NCGS are either self-diagnosed (about half the group) or were diagnosed by a dietitian or non-traditional medical practitioner.

Plenty of double blinded objective evidence to the contrary. Important to note that Gluten never travels alone in public consumption so is merely one part of the issue for some. Wheat et al has evolved considerably since the modernization of the grain and faster than we as humans can evolve (hence the digestive challenges).

This parallels the autism-vaccine debacle but in a less malicious way. It really goes to show how poor the general public is in reading and interpreting scientific research. If you see a headline that screams out "X may cause (insert scary word)" it becomes a truth as opposed to having people understand how to be critical thinkers. 37 participants is hardly enough power to generalize those findings to account for a worldwide phenomenon, it's just preliminary research but Sweet Brown put it best

I read that article, fun read, but a little odd: hey, turns out gluten is probably totally fine for the vast majority of us! But I'm throwing my vital wheat gluten away anyway because who knows what happens when we eat too much gluten?
