On Sunday I had the pleasure of going to Gillete Stadium to watch the Patriots hand it to the Broncos (Omaha what?!?). Inspired by my tailgate, I want to know what your favorite traveling outdoor meal is? It doesn't necessarily have to be for/from a tailgate, but can also be camping or 'OMG I got lost in the woods, what can I cook?'. For now, let's keep backyard BBQ meals out of it, and keep the discussion to cooking 'on the road'.

For a single traveling meal, aka a picnic, my first thought is usually going to be good bread, good cheese and a couple of simple salads that will hold well - maybe something bean-based for example, followed by good chocolate. And a bottle of wine, duh.

Cooking on the road is a wonderful challenge. You have to think about the constraints and then craft a menu within those constraints. Lack of running water is obviously the biggest issue. I love to make dishes that surprise the people I'm with. One thing I love to make is pozole. I do most of the prep at home and seal everything up in vacuum bags. Then at the campsite I just cook everything in the Dutch oven.

Another big hit is Korean bbq. I make up all of the meats at home and then grill on a tiny Japanese grill at the campsite. The sides can be made at home as well.

If you want to turn some heads bring a tagine along and make some Moroccan food. Their cuisine was developed by nomadic people, so many of the dishes work well on the road.

I'm more or less in this bucket as well. But with considerably more wine.

Whenever we have on-the-road get togethers, I like simple salads that have a broad flavor appeal. Curried chicken, Jamaican sweet potato, etc. And I also like fried chicken, which is something that I almost like more at room temp than hot. But I don't do the frying on the road, so I guess that doesn't count.

Outdoor meal......depends on the activity. Hiking, snowshoeing, oddly, I prefer breads and cheeses like Michael mentioned (fond memories of this and Mt. Ranier). For camping, e.g. winter building a tent with branches and a sheet of plastic - good old hot dogs and baked beans, outdoor skating, hot-dogs....no beans (although the turbo boost wouldn't hurt :-)..). Otherwise I just graze on..whatever. Small bites........ and lots of wine to finish the day.

I like to do pulled pork either on sandwiches or with grits. I'll show up to the tailgate with the pork prepped, make a chimney full of charcoal and put it in my Smokey Joe Webber. I'll heat the pork and grits on the grill like it was a stove using cast iron. I think I've tried to be a bit too fancy the past couple of times we've tailgated, and I think I'm going to try and make it simpler. My goal going forward is to do amazing burgers/other sandwiches, although getting props for showing up with grits is sort of fun.

I also will make some salsas and other dips, depending on the season and what is available from the market.

For tailgating, it is tradition to cook brats simmered in beer and onions. However, this year I made muffalettas but breaking with tradition, I wrapped them in foil and heated them over a low grill.

And as other have said, on an active outing, it is bread, cheese, wine and hard sausage - a sopressata or salami.

My boyfriend's family does "foil dinners" that are absolutely awesome. His mom puts a bunch of ground beef, onions, carrots, potatoes, salt, pepper, and a bit of water into a little foil pocket, and throws it on an open fire to cook. Great for camping. Great for summer nights at the cabin. Nothing healthy or fancy about it, and absolutely delicious.

First off, one of these days I'm packing lunch in some tin foil, sticking it on the exhaust manifold or something hot on a road trip with the kids and cooking us lunch as we drive, I think my kids will get a huge kick out of it.

Otherwise with if i plan on not actually cooking something, I love a baguette with some fresh mozzarella, tomato, nice prosciutto, evoo, salt, pepper, some pre made salad, probably a brocoli salad of sorts. Although I'd probably be more inclined to find a local place and make a picnic lunch there on the spot.
