Leaves in Ice cold water

What happen with leaves that when you put them in ice cold water they get a crunchy texture?

Water enters cell walls making them more "full" in appearance and texture. If I recall, this is via simple osmosis.

This is true but there are a few things that CAN happen. They can freeze, which will make them mushy once removed for the ice water. So the trick is filtered very cold water, but really icy can be very bad.

Thanks GLC! Sounds like a physiologic/temperature zone needs to be achieved/maintained. Any idea what that range is or might be? and.....what leave types this might include/be restricted to? Or am I over-thinking?
