iPad Sous Vide Apps

Does anyone have opinions on the iPad Sous Vide apps (Polyscience & Sous Vide Dash)? I am uncertain as to the times listed for various items (they seem a bit extensive).

I gave up and got an Asus TF700 in April. So far, I have had zero issues with this (or any other) site.

My first gen iPad also can't cope with the Chefsteps videos. I have tried Chrome and Safari but both crash most of the time. I took it as a sign I should buy a new iPad when the new models come out! I tried resetting but it didn't make any difference for me. But maybe I didn't want it to ;-)

@Matthew I have had no issues on my first generation ipad with chef steps website. Maybe trying doing a hard reset on the ipad. I have my safari browser start to crash every once in a while no matter which site I'm on. If not familiar with this method, it is simple. Hold down the power and home button at the same time until it shuts off. Best of luck.

I'm guessing it's probably due to it being a 1st gen iPad more than anything. These videos eat up a lot of processing power these days.

I have a really difficult time with the site on my v1 iPad. Almost every time I try to play a video, the browser crashes. It has sometimes taken as many as 4 crashes and reloads before getting some videos to play.

I use the Chrome browser, so maybe it's related to that. (I've never tried using Chrome on my Android phone to access the videos.)

@ttpoker dunno about that. So far from my admittedly minuscule sample the Polyscience app resulted in overcooked goods. Instructions here at ChefSteps, however, have been spot on.

Generally you will find the temp settings match what you see here (or Modernist cuisine which I have more experience with), keep in mind you need to be aware of the size and shape requirements. It provides a complete logging of developments qualified by time, this is impossible to gather for a documentation requirements without the extensive use of a computer and a thermocouple. Notice that it includes cooking recommendations to reduce the most common pathogens? The information provided for cooking time to temp, pasteurize to core and surface are sooooo valuable! When I said its not even a close decision, I ment it... there is nothing else available that provides this level of data available in a cheap and easy to use database format. Time for you to revisit this tool IMO.

Although we don't have an mobile specific app (yet), we've tried to optimize the site for a wide range of mobile devices: iPhone, iPad, iPad mini, and a few popular Android devices. The images on the homepage are swipeable and we strived to make that gesture feel very fluid and natural. Personally my favorite way to experience the site is through the iPad so if you haven't checked out ChefSteps on an iPad yet...please check it out and let us know what you think!

I've fiddled around with both the Polyscience and the Cookingsousvide.com apps and I like the both of them. The cookingsousvide.com app has a lot of recomendations for a lot of specific cuts of meat including fruits and veggies. I like the graph on the Polyscience app and that it configures the pasteurization of the product but it doesn't have as wide of a selection as the other app. Cookingsousvide.com offers a dedicated app for measuring the thickness of your protein but it's not worth the $0.99; if you sign up for their newsletter they give you printables for free.

With that being said though, I think it does force you to do a lot of important steps when cooking this way. You have to do a lot of temp measuring (i.e. food start temp, bath temp) as well as measuring the thickness (or diameter) of foods which once you've done a few times will really help solidify some of the info for different sizes/shapes of foods as they relate to cooking time. So it's kinda like math class, pain in the ass at first but handy when you need to do math on the fly.

I used it for a few months when I had an iphone as a loaner and it's nice since it gives you a timer and a general idea of what time/temp you want but for a beginner it's pretty cumbersome because of all the options for pasteurization and starting temps, etc. I can see it being useful in a more commercial testing setting though.

I'm fairly new to this concept of cooking and agree that advice given in some apps can appear of putting.

I found that after my initial SV adventure I was able to set times and temperature to suit my taste.

Providing that, if like me, you are prepared to eat the final result experimenting can be fun and informative.

By the by, I cooked the steak in coffee butter last night. Delicious and subtle in flavour, try it.

@Tucker: My exact problem. The timing seems far in excess of every other source. But, given the charting on the program, I become uncomfortable going for shorter times.

I know when I was messing with the sous vide dash app you had to play around with the settings a bit with regards to whether you want to pasteurize and what starting temp your food is at as well.
