Since Grant isn't here atm, I'll give the info I know.

It's a UX10 slicer with a granton edge, made by Misono

I'm not sure if he has the 240mm or 270mm, it's comparable to the current UX10 sujihiki, but I don't believe they make the knife with a granton edge anymore.
