Does using a vacuum sealer versus the water displacement ziploc method have any impact on cooking time/temperature? I am new to sous vide and finding everything needs a little more time than suggested.

As long as I don't have huge air pockets - and heat can get to my food - then functionally, no. The only purpose of the plastic is to prevent the food from getting all soaked. As long as I minimize air bubbles (which insulate), I've never had a problem.
