I keep portioned pre-cooked beans in the freezer. A single serving size thaws quickly in cool water. Cook rice, make beans according to your tastes, incorporating whatever veggies you have on hand (use bacon also, duh), and presto, you've eaten well but spent almost nothing, cleanup is minimal, and the variations are literally endless so boredom is not an option!

When my wife is away, I almost always make pasta all'Amatriciana; I could eat that dish constantly. I'm also fond of gussied up instant ramen. But right now, I'm all about McRibs, so very little cooking gets done.

For me it is usually going to be some variant of starch + beans + eggs. If I have leftover rice, it will be a ghetto bibimbap. If I have leftover pasta, something along the lines of carbonara. Otherwise I always have corn tortillas so then chilaquiles become an option.

If the wife and daughter are away, and it is a regular dinner alone with some planning time, almost always...steak on the grill (skirt or porterhouse), salsa verde, sauteed spinach, roasted potato... if it is a late meal alone because I was working late, almost always a pasta dish.

It depends if it is after a long day of work and if that is the case I usually pull something out of the freezer or grab something on the way home. If it is my day off I usually try to get a little creative and do things I cant find around here like a nice gumbo or play around with my immersion circulator. But sometimes you just have to bust out the classic comfort foods you grew up with!
