It has been my experience that most people tend to be of the opinion that two best parts of Thanksgiving dinner are 1) the side dishes, and 2) LEFTOVERS!
As the cooks of our houses, it is our responsibility to reduce waste. That often means having the same general flavors several nights out of the week, which presents the challenge of coming up with creative ways to repackage that Sunday roast.
When you cook, how front of mind are the possible leftover combinations? What sort of modernist spin do you like to bring to refreshing a 2-day old puree or sauce? Are there things you like to make specifically because they supply days worth of food?
