What's the largest Cambro to use it as a water bath?. Does the 1/1 x 12" 4.75 gallon is the right one?.

That obviously depends on you circulator. Most of ones i know can circulate up to 8 gallons, not sure which cambro fits that best. Also some commercial ones may be able to do twice that.

Most use the 9"x12"x18" (external) cambro which hold just under 5 gallon/20 litre with one circulator. The main reason is the cambro is a standard size available with a lid and any of the circulators are rated for a bath this size. Much bigger baths can be used using more than one circulator or if the bath is insulated.
