Use cold water bath for water displacement methode

Probably to simple to mention: I use a cold water bath first to displace the air in my ziploc bag before putting it in the sous vide cooker. Saves me scalded fingers. Who has got anymore simple tips and tricks?

I think chefsteps really outdid themselves with using mason jars in the new sous vide class .. Ive been making different infused butters like this for some time in the immersion circulator and it was so nice to see

For most things we have found that simply dropping the bag in, (with your hands guiding) the weight of the ingredient is enough to push all the air around it out.
