Cover or no cover?

Is there a difference in covering the container when sous vide and not covering? If so, how much does it affect the food that is being cooked?

Short answer is yes. Long answer is it becomes more of an issue at higher temperatures. At 65 °C covering your bath becomes quite important. It won't so much affect the food being cooked, but water starts to evaporate quicker, this means you are working harder to keep the bath at temperature.

Also it becomes an issue on the longer 24/48 hour cooks. The temperature might not be as high but with out a cover you have to add water more often.
