What Knife to choose???

Im looking for a new chef knife (Gyutos) found a great site, looking at Japanese knives but theres so many to choose from. Looking at paying around the medium mark for a good knife that will last for ever. Any recommendations?

I have my eye on the Yoshikane Gyuto. I have a Shun which I like, but my veggies do constantly stick. The Miyabi I have seems a bit delicate so generally reserve it for slicing meats and carving. Though I do like the longer profile. Not sure if that helps, but would give the CS a look over before you decide.JMHO

yea ive seen them and was looking at that one, but when i found that site and all the other knives there are and how cool some of them are i was drawling lol

I have the Fujiwara fkm (240) and love it. In the medium price range though I'd kill for the Masakage Shimo or Konosuke HH.

Hey Joel I would suggest either starting with something like a Fujiwara FKM, Misono, Suisin Western, or a Tojiro Dp if this is your first Japanese knife or if you are looking for something specific try asking on http://www.kitchenknifeforums.com/forum.php as they will be able to give you a very detailed response to your question and can help you find the perfect knife for you.

I want to upgrade my 10 years old 18-piece block set of Henckels Twin Gourmet (http://amzn.to/1Gx1158) with this 9-piece Shun Edo block set from Amazon (http://amzn.to/1uzRUuQ) It looks like a great set at a decent price. I want to add to it a carving fork too (http://amzn.to/1ILzilb)

But maybe this smaller 6-pieces set if enough? http://amzn.to/12FLUct I'm not sure...

What do you think? Should I add any other knife to the collection too? Maybe a different set of knifes? (I really like the block itself too)
