What world cuisine would you like to learn to cook, and why?

For myself, I'd like to have a much deeper understanding of Indian cuisine. I've been cooking Indian dishes for decades, and I'm not totally clueless - I have some understanding of basic techniques and regional differences. But I still have a sense that I'm completely clunky in my methods and especially how I understand the use of spices. I don't think I taste the subtle distinctions that make one blend of coriander / cumin / turmeric / ginger / etc. different than the next.

I am korean and i'm proud of our cuisine. I am learning French cuisine now. Korean cuisine is good for your health and also it's fun to it. It's very fresh and nutritious.... I wanna fusion chef with Korean cuisine and the other countries cuisine...

Indian, Thai, Szechuan, Spanish and Mexican. I know that sounds like allot, but I find myself dabbling a little in all of them, but want to learn more. The other thing I do allot is merge sauces (like harissa and tomato sauce), or szechuan and thai chilli sauce, Indian and french sauces. But I don't have a really good grip on any one of them. So, I guess I'd also request to add another 2-3 hours to each 24 hour day. :-)

I am French trained and have been wanting to learn more about Vietnamese Cooking. I have always enjoyed the food and would love a deeper understanding of the cuisine. Along with that I would love to learn more about Korean cuisine, due to the health aspects and you cant go wrong with some delicious kimchi!

I would really like to see more Italian coverage. What would rustic Italian food look like when we through a sous vide and whipping siphon at it?

An ex of mine was Indonesian, and she got me hooked on that cuisine. Seems like a healthy combination of Indian, Thai, Chinese. Would love to learn more about the food.

The two staples that I consider my wheelhouse are Emilia-Romagna/Tuscan and Catalan. I know those ingredients, I know those techniques and recipes. (Well..... 'know' as much as someone who's only spent three total weeks actually in those places can) Japanese cuisine is amazing, but I have no real desire to cook that food outside of a couple simple dishes that are touchstones for my wife (she lived in Osaka for three years). I'm only just beginning to get an understanding of the difference between northern and southern Thai.

Definitely agree ^^. I would love to understand spice blends better as well, but I would be even more interested in learning more about the regional differences in cuisine around the massive country.

Uighur Cuisine...It really is silk road food and after spending a lot of time in western china, I decided it is the most interesting food palate in the world.

I abhorred curry until I spent a couple of years in the Cayman Islands, the back of the house there is Indian. We (the US) don't have a clue as to what makes the magic in Indian or even Asian food. The flavor profiles are just incredible when used gently and I know next to nothing and am converting people all the time. (next to nothing refers to complete nothing side)

i'd like to learn more about chinese cuisine. I've done some szechuan dishes and they've been a real eye opener. Nothing like what you think off when thinking chinese generally.

Malay. After watching the guys make roti by hand while waiting in the queue at Mamak it looks so easy to do. If I can master the crust on the fried chicken I will die a happy man.

I'd love to learn more about traditional central mexican cooking. I've grown so tired of tex-mex being billed as real mexican food, I would love to learn true basic mole sauces and the vegetable and insect driven food they have as well.

Vietnamese food is delightfully simple in technique, it's all about balance of sweet, salty, sour, and spice. There's a decent amount of overlap with French technique in some of Vietnam's more iconic dishes (think pho or the baguettes for banh mi) but in most cases vietnamese food is about fresh bright salads or clay pot braises since the food primarily surrounds fish and vegetable dishes in more farming/rural areas.

While I've been immersing myself in it for a few years now, I feel like I only have an outsider's understanding of Japanese cuisine. Whether it be modern, traditional, sushi, kaiseki, street, noodle, rice etc. Being an extremely diverse culture, Japan also has SUCH a distinct quality to its food, even with the prevalence of outside influence. I am in love with it....and I could probably eat oyakodon every day of my life.

I would love to explore thai food more .. Real thai food .. Its always been a flavor profile i have enjoyed and the concept of Yum is so intriguing to me with the perfect balance of flavors

Japanese, because its so technical but so completely different from what I know. I also get the feeling that modern techniques would go along way with traditional recipes (e.g. dashi, alkaline noodles, fermentation techniques, ).

I have always wanted to learn a lot more about native north american cooking and food culture. although I imagine it is possible that a large amount of that knowledge was destroyed or forgotten. Sort of what Alex Atala does with south american historical and indigenous ingredients and recipes .

Apart from the basic method of cookery and combination of spices that make up each and every distinctive dish (be it a hearty, meaty curry or a spicy vegetable stew), Indian food is all about humble home cooking. Each family will have it's own recipe and style of making one dish. Apart of regional and religious differences in the style of cooking, it also, majorly depends on how you like your food- more spicy or less spicy, more garlic-y or less garlic-y et cetra.
That's the beauty of our cuisine IMO, it's all about understanding the main flavoring of a dish and then molding the recipe according to your preferences- likes or dislike.
