Hey all.
I'm doing some preliminary research on a new kitchen project and would like to solicit feedback/recommendations/guidance from the group. I'd like to install a hood over my combi oven but am wondering if I need a hood over my cooktop as well. I plan on installing my cooktop in an island which is where I'll do most of my prep & stovetop cooking.
My question is, how necessary is an exhaust system above an induction cooktop? Ventilation above the combi is a must, but I feel like ventilation above the stovetop may only be necessary when searing over high heat and boiling excessive amounts of water. I'm considering the option of installing a two-burner induction cooktop under the hood (next to the combi), specifically for searing over high heat and another set of burners on the island which is what I would use for all non high heat cooking.
