Global GF33, Benriner mandoline, speed peeler and a sushi knife is probably what I use the most.
The chef knife is still my most beloved tool.

I don't cook professionally so I don't have a kit like that but I've really taken to using a 18cm petty knife. I bought that on my last trip to Tokyo and also picked up a 24cm gyuto from Masamoto Tsukiji. I felt my 21cm Tojio was a little short so I was dying to get something larger, however I like the petty so much that the gyuto remains in it's paper wrapping.

Nice scores on the knives! I know what you mean though I have a 210 petty and I use it quite abit at home since its so light and agile and is that a boardsmith board? If not it looks really similar to mine just smaller.

How do you like the Suisin Inox gyuto? I'm considering getting another Japanese knife with a slightly larger handle, and that's on the short list.

Yes, that is a BoardSmith! Good eye. I forget the dimensions but it's a non-traditonal size (maybe 12" or 14" x 20") he offered up at one point on knife forums.
Where did you get your 210 petty from? Larger sizes are much harder to come by.

It's worth the money for sure I love it to be honest feels good in hand sharpens up super nice and is quite thin and light. My only gripe is it has a bit of flex since its thin but really its just my personally preference to have none.

I like the utility/ petty knives myself. Very tempted to put the ryu just featured on this site to task!

My profession is cooking and I am a chef. I should keep the different types of knives, chopper, and scissor. I have one Ergo Professional Chef Knife bag.
Knife Roll bag
keeps all my knives safe, keeps sharpness and shine. It gave the 13 pockets and one net designed pocket. I keep my regular tools in this bag. The shoulder strap will make my hands free, at the time of carrying.
