Flavor and banana

I just did a 2.5h rum extract, black onyx choclit and orange extract banana.
While the taste and texture was awesome I'd hoped for more flavor infusion.
I used 3 table spoons of water, 2 tsp of rum extract, 1 tsp of orange extract and 3tsp of choclit powder.

Frozen banana bagged with this and then sealed to a medium pull.
Served with an exploded and brulee'd cheese cake, raspberry sorbet.

I've always done that since that is what I learned in traditional cookery but the science is interesting.
