kiwi soup color turns brown

in the restourand were I work we do a kiwi soup dessert. basically we purre the kiwi with some herbs and sugar.
but the soup color turns brown after a day in the fridge. is there a way to maintain the green color of the kiwi?

Something like fruit fresh or lemon juice or vitaminc would delay it I think, same as apple or avocados- don't think you can stop it

Yeah, try taking a 500mg vitamin c tabled, powdering it, and put that in the blender with the peeled kiwi before you start pureeing. I suspect that will buy you quite a bit of time before it browns.
