I had seen the clip before but, had to watch again. To me it shows we tend to work with preconceived ideas, i.e. we were always taught things had to be ripe or you shouldn't eat them....food for thought

agree, but to me it also shows how to create a dish, flavor profiles, how to make something simple very interesting(like the apple dashi or pickling) and that it doesnt always have to go through all these fancy techniques or cooking at all. sometimes raw is the best

"Mind of a Chef" is great. I'm still hoping they choose Daniel Patterson for a season —actually a Kinch/Patterson/Wylie trio would be fairly mind-expanding.
