Lobster and Cheese

Hi All,

I am writing a humorous post for a site and am tasked with making lobster nachos (for New England/Football reasons).

I'm probably going to adapt the cheese sauce here on chefsteps, but wanted to garner some suggestions about what kind of cheeses might not overwhelm or perhaps even complement lobster. I'll likely infuse the milk that goes into the sauce with lobster carcasses and use lobster infused butter as well, so that taste will be present in the sauce itself.

Also open to hearing other ideas! probably going to do a tamale guacamole which i think will be funny.

I'd probably stick to nutty cheeses like parm and gruyere. Cheddar and lobster doesn't sound very appealing to me.

Lobster and cheese is really gross (most cheese anyway). I'd just skip the cheese altogether and instead make an awesome guac, salsa. Then make another thick sauce using the carcasses, cream, butter, shallots, mustard.

As a rule yeah, it's just not done.

There was a competition I did in which I was given Loster, Salmon and an earthy Brie. I tried making a lobster Burre blanc in which I'd mount the Burre blanc with brie, it worked, but day of I wound up making more of a bisque in which I mounted with brie, left a bit in chunks (it was sponsored by the company that made the cheese, they wanted to see it).

You could also freeze a softer cheese and rasp it over the product, you said sauce though... So I'll shut up

Fuck it, toss a baernaise sauce on there like nacho cheese, even kinda looks like nacho cheese.
