I tried this little experiment not too long ago and loved it! I wanted prime rib, but I'm cooking for one, well and a kitty who loves meat. I found some beautiful prime ribeye steaks at the market. I heated up the cast iron skillet, seasoned just the edges of the meat, then seared only the edges as well, all the way around. Then I cooked it sous vide to 132F for about 1.5 hours. I added homemade beef stock to the pan, reduced, added a splash of worcestershire sauce and seasoned. It was a fun experiment and it was like having a prime rib dinner.
