Does anyone know of a way to successfully compress/pickle foods in a foodsaver bag? It seems that whenever I add a sufficient amount of liquid to the bag, it is sucked through the seal during the vacuum process.. Hopefully there is a way to solve the problem aside from investing in a chamber sealer at the moment...

Depending on your specific model, it may have a hose for use with their Foodsaver vacuum canisters. It is hopeless to try with bags.

The only success I've had is (a) freezing liquids first and/or (b) (and this only works with a small amount of liquid) folding a paper towel, many times, so that it ends up being a 1 inch wide sheet. Then placing that inside the bag, just before the place that will seal. Neither is a great solution. It is generally a losing battle.

If you are talking about what the team here does with compression and quick pickling then no you can't do it with a food saver. If you are just worried about the liquid issue then you can hang the bag off the edge of the counter to make it harder for the liquid to get pulled up.

I think the best approach is Frank suggestion. Freeze the liquid

Yeah, this is an inherent issue with edge sealers. There's no real way to get it to work, just bodges that get you a little bit of the way there. You'll never be able to actually infuse/quick pickle, because you're not really pulling a vacuum. Just making a really tight seal around the product.

Would rather just take the $100 spent on the sealer and put it towards one of the lower end chamber vacs. (I don't have a vac sealer of any kind, mind you. Just opining.)
