I do a good bit of cold smoking during the cooler months. It's just too hot here in Georgia to get a cold smoke otherwise. I've tried some pretty crazy ideas, but I was wondering how using a combination of the Smokin' Gun along with a chamber vacuum to cold smoke a cured belly. Fill the bag with smoke and meat then seal it. It may take a few times to permeate the meat with smoke. I'm just thinking out loud here. Any thoughts on the idea?
