I'm in the planning stages of remodeling the kitchen in my house and I want to put a commercial combi oven in. The restriction is it needs to be single phase (my budget is not unlimited to run 3 phase) and I'd prefer the oven to be electric rather than gas.
Alto-Shaam have the
CTP6-10E Combitherm PROformance which is single phase, and also allows you to do a hot or cold smoke in the unit. Has anyone used an Alto-Shaam combi?
I have used commercial combies (Electrolux and Rational) and I know how much better they are over the residential steam ovens (Wolf, Gaggenau, Miele I have used). I also know the uphill battle I will have slapping sense into the City and building inspectors.
