To me, a combi oven would be the most used and least daunting piece of commercial equipment for use in the home. The ones with the touch screens are easier to use than a microwave and produce SV results. It is a shame the commercial manufactures do not see the potential resident market for their product.

I think the list is to long to post here but a Combi would be amazing. I think the thing I want the most right now is a chamber sealer. Wish they weren't so darn expensive.

I'm pretty sure there is one commercial company trying to make a home version. I saw it a while back but can't remember who it was. The three phase power requirements of the major ones are the most limiting factor and then it may also change your hood requirements

OMG! a walkin fridge with the back being a walk in freezer. Im starting demolition for a door out of my kitchen and step right into the walkin located in the garage......now

If you live in the great white north you have a walk in when you walk outside for 5 months of the year.

You need a water supply, filter, drain. 208-240v single phase works for a very small number of models, while all the big ones need 3 phase. If you have the gas pressure you could go for a gas model.
Using commercial equipment in a residential home means you can't get the unit serviced in place. Permit issuers, building inspectors, and insurance companies all get their panties in a twist, but if you follow the manufacturers requirements you can get everything passed.
You can get ventless hoods for most combies which mean that you do not need the unit under a vent hood.

In order of wanting: Combi, walk in fridge/freezer, chamber vac. In order of practicality: chamber vac, walk in, Combi. Fingers crossed I'll some day be able to have all 3!!!

Oh man, hands down if I could have one thing it would be a commercial dishwashing setup. Nothing impedes my cooking more than the crappy experience of washing up in a home sink and with a dishwasher that has a 2 hour cycle.
