Sausage Making Day

It's cold and rainy today and I am staying in to make sausages. I've been making a good bit lately including chorizo, chicken and spinach, Italian, breakfast maple and a beef. Here's a few pics.

The last two are homemade skinless hot dogs, some regular size and some foot long.

Can you find a local slaughter house? Not sure where you're from but I've even had luck with local grocery stores by asking if they could get it for me. If you do find it and can get it skin on you should try some and make your own chicharones.

If your grocer/butcher is decent, they'll be able to get you fat trimmings for basically free. Whenever I need pork fat, I call the Whole Foods in the morning and they save the scrap for me until the evening. They literally give it away. So does the other upscale grocer around here.

I live near an H-Mart (Philadelphia). They package just pig skin...awsome for chicharones! Saves a lot of extra work.

I get pork fat at asian markets here in Seattle and beef fat from a local butcher.

I have a couple of old school butchers near me. They carry pork fat most of the time. During hunting season it's hard to get so I stock up. I keep 10-12lbs in the freezer most of the time
