It looks like the Yoshikane Gyuto from the knife collection. Click on resources on the ChefSteps home page then knife collection.

the exact one he is using is not available at the moment but here is something similar from the same line

or if you meant the one he uses to chop the chocolate they don't seem to carry it anymore at epicurean edge and a much smaller version is only available

I have not personally used either of these knives but the yoshikane is held in very high regard by many people that have used them if you'd like more opinions maybe try making a post on
