Sous Vide Supreme for making Mozzarella

As I was making Mozz this weekend, being careful to hold the temperature steady, I was wondering why I couldn't use the Sous Vide Supreme to do this. Since it's not a circulator and doesn't have any exposed parts in the tank, would it not be the perfect device to hold the milk at a constant temp while the curds form? Can anyone think of a reason that it wouldn't work well?

Thanks Johan, I'm guessing that would be necessary with a circulator system, since you need the liquid moving through the device to make it work. But there is no such concern with the Sous Vide Supreme, so I was wondering if I could use it straight away without the additional pot.

I've seen several bread recipes doing the same, you could do the same with a regular circulator once you hit temp, close the circulation vents and I would think slowly stir it every now and then or keep a very low circulation - if you tie a towel around a stainless steel bowl you get a pretty stellar flotation device too.

Finding the right milk and making sure you have good water does a lot.
Also not using junk rennet. I like the microwave part because it is really easy to time
and work.

Sous vide Supremes would be very useful for making mozzarella, and since we now have some Sous Vide Supreme units around ChefSteps, we'll try to get a demo of doing this up in the coming weeks.

Not that I would recommend doing mozz or butter with a polyscience, but I have heard of butter poaching lobster in one of my cook books by TC. Meaning the only liquid in the cambro is butter.

I mean obviously there are systems out there that can handle that but the polyscience isn't one of them. It would make for a really nice place to store cooked steaks hot off the charbroiler though, fill that sucker up with duck fat and herbs.... mmmmm....

Imagine brown butter going haywire and you standing there with a spatula, I'm a pretty large white guy and my wife is a darn open latina...
I had a kitchen counter covered in the fucking stuff, blew a fuse, cut off the water and spent around 4 hours wiping the shit off the counters.
