
This is a Fish N' Chips dish I found inspiration from recently. The chips are Pommes Macaire. Potatoes that have been poached, riced, tammis'd and mounted with cream and eggs. The potatoes are then spread onto a hotel pan and baked at 250 F for 30 minutes then chilled and portioned. The result is then fried at 375 F until crisp and golden.
The fish is Spotted Rabbitfish. A fish I was entirely unfamiliar with. It's Gulf Coast caught puffer fish with a texture similar to Dogfish. The Fish was brined in a 10% salt solution for 15 minutes and then Buttermilk battered into a Cornmeal dredge. 2 parts cornmeal, 1 rice flour, 1/2 part cornstarch and seasoned with Creole spices.
