There was this coffee rub I found one time, I actually think it was a safeway house brand that I bought on a whim and it was damned delicious. I also really like to blend dried porcini with instant espresso and cayenne to make a nice rub for skirt steak tacos.

I did bison short ribs cooked SV (133/72hrs) with coconut oil infused with coffee (as per the CS coffee butter recipe, but with a 1/1 substitution of coconut oil). Served it over cheesy polenta with lardon and maple syrup. I intended to spherify the maple syrup but ran out of time. Regardless, it was really good.

Also +1 for redeye gravy. Delicious.

Does espresso powder count? I had a Bobby Flay recipe for an espresso powder rubbed filet that was really good.

In Aquavit, Marcus Samuelson has a (honey) mustard sauce for gravlax with some coffee added to it, which is quite good. The coffee really balances things nicely.
