iSI Siphons - black or red band?

iSi siphons have either black or red bands to indicate temperature tolerances (?). I am not clear on what applications are appropriate for which siphon (by color). What sort of hot (?) applications are there?

Out of the red band one the thermo holds temp longer, the Gourmet has the advantage that you can heat it in a bain marie, the black ones are I think only for cream whipping. Think hot foams and such.

I have the thermo. It's great, but I'd recommend the gourmet for maximum versatility.

The black ones can be heated if you use the red silicone gaskets.
The gaskets are interchangeable.

the hot foams are very common. Think of any warm puree (sweet or savory) and make it "lighter". Have had good success with potato foams (add vanilla, or garlic oil, or whatever flavor you want to add), caramelized fennel foam (probably the best received by others), corn chowder foam, etc etc.
