Interesting New Kit (Almost) on the Market

This is part of GE, but the concept is very interesting - an induction cooktop that talks to a temp probe. Use the cooktop as a cooktop but attach the probe and you have a +/-1°F stability liquid bath.

Great for small kitchens, chocolate work or cooking in different mediums. I'll have to what for the end of the year to see what it is like.

I'm curious how important circulation is for consistency in SV. Anecdotally: before my Sansaire I used one of those DIY power boxes with a thermocouple that would cycle the power to a slowcooker on/off to maintain temperature. Even though the tolerance seemed pretty good, the results were never on par with what I now appreciate with a true circulator.

It says down in the FAQ ~$250 - a fair price for an induction burner and temp probe.

sous vide supreme will have you believe that it's not that important. I think it will definitely depend on the size of the vessel being used though.

It also deep-fries, which seems like a smart upgrade capability to me. If it had 1° temp control from the cooktop itself, it'd be a worthwhile chocolate temperer, but if there's a thermometer, it'd need a free-flowing liquid to have that level of control. Sigh. One day I'll find an induction burner that can temper chocolate...
