Kitchen equipment for an almost desert island
Hi There,
I´m going to start to work on an Island resort in the Philliphines, with his advantages and disadvantages. The kitchen already have a combi oven, 6 gas fires, 2 dehidrators and plating stuff and I´m planning to take with me a Sous Vide circulator from Vac Star, poaches, a thermomix, a few blowtorch, some textures, thermometers, knifes, smoking gun, siphon, superbag, some silpat, isomalt, surf board and sun cream.
The main problem to work on this island is that the suppliers just deliver once a month. The island is not so big, just some resorts around and a few shops for the local people with basic daily products so I need to be sure that I take all necessary at once.
As main foodstuff fresh seafood and fish, chicken, pork and carabao meat .
Any advice will be appreciated.
