fish knife

Have a shun and miyabi chefs knife and need to add a good knife for fileting/breaking down whole fish (guess I'll need new shears too :-)..). Any recommendations on the knife? Reviewed the cs knife selection and didn't see one..?

Depends on what style you like. A Japanese deba would work in a lot of instances if you break fish down in that style. Otherwise a more traditional flexible boning knife is a fisherman's best friend

Thanks Brendan, I am very much a rookie and would envision breaking them down similar to the halibut and salmon videos. Have only ever done turbot and bass. And only a couple of those. Other wise i tend to buy filets or whole muscle.

I have a Wusthof 7" ($120) and a Dexter 7". ($20) and I prefer the Dexter any day. It's not a fancy knife but it feels great in the hand and I love the flexibility of the blade. I break down fish several times a week and it holds a nice blade as long as I hone it regularly.

I'd probably go with a flexible knife then, it's overall more versatile and you could use it for more than just fish.

, I have the Global flexible filet knife and really like it! I also use it to remove the entire breast (half) from the turkey at Thanksgiving so I can cut it across the grain for serving.

You should go to YouTube and search for Captain Vince Russo. He's an absolute genius at filleting fish (even shad!). You might come away with a different idea on the type of knife you want. I certainly was.
