These are fun to make. Fresh herbs sandwiched between two thin slices of potatoes.

beautiful! what type of potato? how did you cook them? did you dehydrate them?

You can use whatever ever type potato you want. I've done tiny ones, medium and large using all kinds of potatoes and herbs. Use a mandolin to thinly slice them. Rinse them off but don't soak as this makes them curl up. Dry them with paper towels. Put parchment down on a baking sheet. Brush one potato with butter and salt and pepper, lay buttered side down on parchment, add herbs then top with potato buttered/seasoned side down on top of the herb and mash down to seal, also butter top. Place another parchment then another baking sheet, press down use a cast iron skillet to weigh it down. Bake in 375F oven for about 12 minutes depending on size of potato. Easy Peezy.

That's the way I have done this (I use Silpats) in the past ... Easy to do and most impressive!
