Better late than never, right? (Sorry!!) Today I wonder what your favorite 1 ingredient dish is??
For example, I love to work with sunchokes. I can roast, fry, puree and pickle them; together, these techniques make a single ingredient really shine.

Bacon or eggs, or cheese. Hard to beat a nice crispy rasher or a poached/soft-boiled egg. Unless it's a fine cheese just plopped on a plate... My favorite lazy dinner is a cheese plate.

Pretty much any root vegetable since they can be pureed, sautéed, raw, fried, pickled, roasted, dehydrated, etc.

I have to go with eggs. They are so versatile. Scrambled, boiled, poached, fried, dyed and laid to the side. I've also used them to decorate my neighbors house. Lovely color contrast with the faux red brick I must say.
