I was wondering if anyone might be able to help me with a somewhat unorthodox request. Basically, I need to "thaw" a frozen product to approximately 27F as quickly and evenly as possible. I've seen
even-thaw refrigeration systems that claim to do just this, however their suggested temperature range is 37-41F. I suppose a freezer set to 27F would do the trick but was wondering if anyone might know of another approach.
