Vinegar Powder?

Does anyone know how to make vinegar powder? I heard the making sodium acetate is okay, but a little to weak.

I've heard quite a few people dehydrating vinegar in an oven at 150-200F but in all honesty I just buy these products from Modernist Pantry. The quantity that you get per batch is dismal at best. I'd rather save the opportunity cost and spend the $5.99.

Commercial vinegar powders are spray dried, which requires a big investment if you want to do it yourself. It's better to just buy what's available than to make your own.

I actually stumbled across a random way of making this years ago and love it. Originally I thickened straight vinegar with the starch found at the bottom of a lexan of cut raw potatoes. I heated the vinegar and added the starch and allowed it to simmer, thicken, and cook out any starchy flavor. I then spread the gel (similar in consitency to a fluid gell) onto silpats inside of a dehydrator and dried until flaky and crisp. A quick grind in a coffee/spice grinder and you have a super fine and extremely potent powder. Warning: Because it is so fine it lingers in the air and will cause a MAJOR coughing fit if you sniff a little too hard, so be weary
I recently added this to the menu at my restaurant as malt vinegar powder for fish and chips and was able to replicate the process using either processed potato starch or xantham (same process as making a fluid gel)
Simmer it with herbs for a delicious topping for chips or fries. Hope that was helpful! But like Rob said, if you aren't crazy about making it, buying it is MUCH simpler.

Let's say I wanted 3-4 oz of end product. How much vinegar and starch? Would cornstarch work as well?
