After reading various CS forum posts over the past year, it seems the ideal sieve is:
- stainless steel (no issues with acidic foods that brass sometimes has)
- 12 inches in diameter (gives your hands space to work the product)
On affordablesieves.com, you'll pay at least $100 for a #50 with those specs. I figured there had to be a better option. One thing lead to another and I had some shipped from a region in China where they've been making metal mesh for 500 years. I've put 5 of them for sale on Amazon for $60 w/ free shipping (Prime eligible, for bonus points).
