I'm wondering what causes food to take on a gassy flavor when a sauté pan ignites in flames. Anyone have an idea?

What are you doing that causes it to ignite? The only time that ever happens to me is when I'm flaming off liquor, and that doesn't produce the flavor you're talking about.

I dont know but i find the flavour disgusting and have my cooks start again when i see that happen.

So I'm still hoping to get a concrete answer on this. Maybe a better example. If I'm making one of our wok dishes I'll start with hot oil. If the protein I add has some excess liquid on it the wok will ignite in flame, often burning pretty heavily. This usually results in a gassy taste in the dish. I have a theory that it has something to do with the gas from the burner making it's way into the food when the flame transfers from burner to wok (or in some cases sauttee pan). The thing is I want to know scientifically what is happening. Are gas ions mixing into the oil? Coating the meat? Does it have to do with a decomposition of oil at that high of a heat? I would imagine this flavor is why people prefer charcoal over gas grills.
