im not sure if this has been asked before, but I'm only aware that Alto-Shaam makes a precision smoker(almost like a combi oven with a smoker incorporated), are there any other brands that are worth looking into?

Rational have an optional accessory they call the

Cleveland Range have the
ConvoSmoker
, a smoking option for their ConvoThermo combis.
I've had a few hours play with the Alto-Shaam in a demo kitchen with the smoker. We did both hot (pork ribs) and cold (cheese) smoking the you would be able to get some great results after a few days of playing (you would need time as you can adjust the temp and time of smoke, amount of steam, oven temp and overall cooking time).

The Alto-Shaam is, well, an Alto-Shaam with a smoke box inside. It works really well. I have had the same one for about a dozen years in my restaurants and it has never broken down. Its a very basic unit that works. The only thing is that if you use it to smoke, it will impart a subtle smoke flavour to everything after unless you clean it to within an inch of its life. Not the worst thing unless you plan to use it to bake creme caramel or something....

I have a Humphrey's Smoker and it's amazing. They have a bunch of different sizes, colors, etc.

Hi Grant,
What about Bradley's vs Cookshacks? To get the later shiped to The Netherlands would be qualified as a "mission almost, yet not totally impossible", whereas Bradley's are locally available. Would it be wordt the hassle?
