how to do flavoured balsamic vinegars

Hi Chefs,

I have stumped the team of chefs at Chef Steps with this question.

My closest olive oil/ vinegar store has closed and I use the Caracara Vanilla whites balsamic vinegar all the time. I've searched Google and haven't found anything. Can anyone point me to a recipe to make my own vinegars.

To infuse a vinegar I'd say all you'd have to do is heat it up, not boil, add vanilla pods and then have patience.

If I recall, it's about 1 bean per 500g. Simlply pour in jar, cover with cheese cloth and shake/distrurb once a week or so. 2 weeks will be representative, longer is likely a bit better. Also works with fruits and you can modify flavors accordingly. Great technique for raspberries etc as well (mine just finished last week).

It’s a rather simple if you just take any type of vinegar and add your direction of flavor to it. For vanilla:

250ml vinegar (balsamic or plain wine vinegar)

2 vanilla pods (Cut pods open along the length)

Heat up the vinegar and vanilla pod quickly for one minute; pour it (+pod) in a sterilized bottle keep it 14 days in a dark cool spot. Drain it through a filter cloth and us it.

If you want to make vinegar from base up its a bit more equipment and time intensive, close to setting up for making your own wine.

You could also try the rapid infusion technique with the isi if you wanted to play around

My one thought is the Orange Caracara part of the infusion needs to be clear. How do I keep the cloudiness clear? Any thoughts?

For individuals hard to archive without the right equipment, I would distillate a vanillae orange essence as distillates are always clear in color and than blend it with the vinegar of choice. But if you can’t lay hand on a small distill ….,I always find a light coloration in vinegars as rather appealing.
