How to make EPIC bar style beef bars

I've made plenty of jerky with a dehydrator, but I can't find anything online on how to make the thicker, chewy bars like EPIC bars. Do they cure them?

I need this same information; as a child I ate some chewy bars that had a lot of mashed dates or figs in them…the elderly lady who made them kept them refrigerated and claimed they were a great laxative…wonder if they also contained prunes??? They were very sweet and no curing had been done. I doubt any baking was done either. Just offering this as an idea for some adhesion to a granola type mixture.

I can't comment on the technique they use to bind everything together, but EPIC and Tanka bars are both cured.
