Hi all,

I was wondering if anyone else here is Australian and has any good ideas as to where to source ingredients/equipment?

Currently I'm looking at getting a sous-vide solution...and to me it seems pretty clear that (considering the size of my pockets) the Anova Precision is the way to go. I'm not sure if there is any resellers in Australia? The $50 price increase to get the AU version + shipping will result in it being significantly more expensive for me. Also if anyone knows a great place for knives in Oz that would be great

I've also been moderately struggling with sourcing some ingredients. I have heard of Melbourne Food Depot (an online store), though I am hesitant to purchase from online sources. Does anyone have any experience with online purchases of ingredients?

Modernist Pantry (online) carries all the specialized ingredients you'd want and they ship anywhere on the globe. I've ordered from them several times and have heard nothing but good things about them from international buyers.

I mostly buy overseas. I am pretty sure you have to buy the anova circulators o/s. I know I did, but luckily before the dollar tumbled too far. Anova even ship with an AU style plug which was a bonus. They also periodically do a special $50 off. That at least covers shipping. It may be worthwhile waiting for another one of those. I have both the A-One and the APC. Both are good but I would really like to see a merging of the two. For ease of use though, the APC gets the nod. I don't think the Bluetooth functionality has been implemented very well though.

Locally and bizarrely, Country Brewers have a reasonable selection of ingredients and have both an online presence and b&m stores. I just bought some pink salt from them for not too big a mark up.

Green living Australia in Queensland have a few things.

Melbourne food depot have quite a selection but are quite expensive.

I have also bought from modernist pantry and found them very good. Though as you know, the freight can be a killer.

Bit late to the party, but totally agree with Greg and Brandon. Have had good experiences with Modernist Pantry, whereas the mark up on Melbourne Food Depot ingredients is too high for mine. For hydrocolloids like agar agar and xanthan gum, or glucose syrup or starches, try your local Asian grocery store. If you're in Melbourne, Minh Phat at the Queen Vic market is an excellent and cheap resource. +1 for Country Brewers too, I also got pink salt (albeit uncoloured) from them.

I bought an Anova Precision Cooker from the US too, but had them send it to my mail forwarding service (Shipito), who sent it on to Oz. Forwarding was $45, which was $35 cheaper than Anova's default carrier rate.

For knives, try hospitality supply stores (Cedar Hospitality in Melbourne is good) or http://www.chefsarmoury.com/ for some beautiful Japanese blades (and konros!). They have physical locations in Sydney and Melbs. That said, while I'd love a really nice knife, since learning to properly sharpen my crappy old chef's knife I don't feel I need one.

Hi Jesse-sorry I can't help with ingredients here in Oz but I am interested in any replies. I recently purchased a Sansaire circulator which has been great. I also bought a Polyscience Chamber Vacuum sealer which I am having difficulties with as it is not pulling a strong vacuum. I have bought my German and Japanese knives at Victoria Basement in Sydney for about half price.
