I took a look at this campaign, and even though the Meld looks cool, I can't imagine really what I would use it for. Basically, the Meld tracks the temperatures of liquids and adjusts the burner temperature of the liquid up or down based on whether the things you're cooking is 'done'. The application for poached eggs and caramel is obvious...but what else would anyone use it for? And apart from the caramel, it does seem like even the most novice sous vide applications teach us how to take care of eggs and egg-based sauces -- on top of all of the soups the Meld campaign advertises being able to cook.
Is there some really obvious benefit that I'm missing?

For around 120 bucks it lets you control temps to less than a degree on any gas or electric range. If this works as advertised, then every pot you own could be used to do sous vide, as a crock pot, deep fryer with controlled oil temps, hold bags for service at any temp you want. More than one knob wouldn't break the bank.
I brew beer and could do a complex step mash on my stove using a brew in a bag technique and know I'd hit and hold my temps. In any pot. Then could go straight to the boil This would be the cheapest way to get into all grain brewing with temp control I can think of.
If I didn't have equipment or had a small space this would look like a pretty awesome way to start doing some great techniques for a small initial investment.
