Has anyone encountered any interesting techniques for cooking things that seem out of the ordinary? I love discovering new techniques to cook stuff. A few that I can think of:
I think its become pretty common knowledge now but the constant flipping of steaks made famous by Blumenthal/Mcgee has proven really useful to me
Alain Ducasse's method of cooking steak over medium heat where he does not aim to create an intense crust is a great read as well
I saw Magnus(of faviken) cook a piece of pork by sort of running it around the edge of a hot pan(I believe this is so that the pork is constantly in a hot spot and this develops a crust quicker) on mind of a chef
I remember seeing a technique for roasting carrot for an extended period of time so that all the water in the carrot has evaporated and you're left with an incredible intensely sweet bite at the end(If anyone remembers where they saw this, please let me know)
