In my new kitchen, I've decided I never use four burners simultaneously - and if I need more, I can use portable induction burners. So instead of a four-burner drop-in unit, I'm going to go with a two-burner Wolf induction cooktop and the Wolf fryer installed in the countertop.
I've never used the Wolf fryer. It's got a bottom drain I can hook a hose to (good), and the heating unit is below the oil reservoir (bad; particles will drop and burn, unlike commercial units where the heating elements are in the middle). It's fifteen inches square, unlike many competitors' rectangle. Does anyone have any experience with Wolf products?
Miele is also an option, which I'll go look at tomorrow. Gaggenau seemed a little small.
