Heating liquids sous-vide
Paul_Raphaelson_79373
Has anyone seen time/temperature graphs for the response of liquids in a bag? I'm thinking of things like custards.
Thanks!

I got the SV Dash; unfortunately there's no category for liquids, gels etc.. Great app otherwise. Btw, the app is by Darren Vengroff, not Mr. Baldwin. Sadly he hasn't done much with it in the last year or two. I remember hearing he was trying to sell it.

Take a look at

's "Sous Vide Dash" app for iOS (and maybe Android too) or the Polyscience app (pretty sure they're the same app and he sold them the code). It's got a heat graph with a little dot that moves along the graph as the minutes pass, and it shows you surface temperature and core temperature. The graph is necessarily small to fit on the screen, but both axes are labeled.

Thanks Todd. I've seen that. I'm looking for time / temperature charts or curves which would tell how long it takes a 1 quart bag of custard starting at x° to reach y° in a water bath that's z°. I've only seen this kind of thing in charts or software for solid food.

If I recall, MC has a table for egg custards (not just liquids). Chapter 4? I have to borrow the set and haven't had it in a bit. MCAH has some varying temps depending on if you are after a custard, or sabayon (and also in jars not bags). Temps there vary from 158F-181F.
